Trick or treat? I’m going to go with treat! I made the most delicious protein packed cookies to date for you this Halloween and they’ll keep your skin looking great too!

Not only do these cookies look adorable and delicious, but they’re also packed with protein, collagen and tons of yumminess like dark chocolate and cashew butter. Are you drooling yet?

Okay so here’s the deal. These cookies are good for you on so many different levels. They will boost your collagen, fill you and satisfy your sweet tooth in a healthy way. Oh did I fail to mention they’re pumpkin spice flavored too??

Without making you wait any long here is my Pumpkin Spice & Cashew Butter cookie recipe.

::Cookie batter::

  • 1/4 cup of all natural cashew butter
  • 1/4 plant based vanilla protein powder -my favorite is the perfect fit protein from tone it up.
  • 1/4 cup of almond milk
  • 1 scoop of collagen- my favorite is from vital protein
  • 1 or 1/2 tablespoon of pumpkin spice seasoning (depending on your love of PS)
  • 1 teaspoon of cinnamon

::Topping::

  • Dark chocolate 68% or higher
  • Himalayan pink salt or sea salt

First heat up the milk over a low flame once warm remove it from the heat and mix in the collagen. This is so the collagen will fully dissolve.

While the milk is cooling in a separate bowl; mix together the rest of your ingredients. Then slowly mix in the collagen milk.

If your mixture is too soft let it set in the refrigerator to set. Once the mixture is set you can then cut it into shapes.

Preheat your oven to 325 and bake cookies for 10-15 minutes.

Once your cookies have cooled then you can melt your dark chocolate and dip one side of your cookie into it. Top it of with a sprinkle of pink or sea salt over the dark chocolate and let it cool to set.
